2024 Havilah Pinot Noveau
Inspired by some of the juicy little italian reds we’ve seen over the previous summer in the wine bar.
This is mostly pinot noir, made in a few different ways, with a splash of meunier & gris whole heartedly helping this be an absolute thirst crusher.
The base of this is from our farm, again that block of abel clone that is super versatile and fun to do different things with. Picked super fresh, the main component is lightly handled, pressed off early, and sent to old barrels. There’s also a little bit of proper cab mac from the same block for aromatic lift.
The meunier came from chartley, tiny little ferment, but picked at sparkling numbers, so super bright. The gris part is the loosener here, makes things
all slippery and easy to drink early, its the same parcel that goes into the OGG, I just use this to cut the blend back a touch, shave a little bit of red tannin away, again in the pursuit of refreshment.
